Arctic char belongs to the salmon family. However, its flesh is considered tastier and more refined. The more dark red is the flesh, the more fish is prized.

- Its oily flesh can vary from a pinkish-white to an orange-red.
- It has a flaky and quite firm, but extremely fine texture. It tastes similar to trout and salmon, but with more nuance and punctuated by a nutty aroma.
