- Its oily flesh can vary from a pinkish-white to an orange-red.
- It has a flaky and quite firm, but extremely fine texture. It tastes similar to trout and salmon, but with more nuance and punctuated by a nutty aroma.
- Rich in Omega-3 fatty acids, in vitamins B12 and D, as well as in selenium and phosphorus.
