Wild squid retains all the nuances of its texture and flavor when frozen. Often, it is more tender. Smaller than the octopus, it is differentiated by its elongated body, which is longer than its tentacles.

- Its shimmering white flesh is very lean.
- It has a firm but tender texture, more than that of the octopus. Its taste is very delicate and punctuated by grilled, almost caramelised, hazelnuts.
