- Raw, their flesh is translucent grey, cooked, an inimitable purplish-white. They are very lean.
- Their texture is very firm and fleshy. Well prepared, they are very tender. Their taste is subtle, but more pronounced than squid, and slightly salty. When roasted, their taste is pleasantly intensified.
- Extremely rich in vitamins B12, as well as in selenium and iron.
