Common name: Yellowtail "Hiramasa" kingfish

Yellowtail amberjack is a fish of exceptional quality, greatly prized by top chefs everywhere. The Japanese name, "Hiramasa", is used to differentiate between wild regular amberjack and the prestigious one, used for sashimi.

  • Its pale pink flesh is oily.
  • It has a very flaky and firm but moist texture. Its taste is pure, slightly sweet and fairly rich.
